Award-winning Australian whisky producers, Starward are the new kids on ST. ALi’s block, relocating to South Melbourne for a short stint until April 2020 while they finish big renovations at their Port Melbourne distillery.

As the third evolution of the Starward Distillery, the revamp signifies an exciting period as they prepare to meet the growing global demand for their whisky. The distillery refurbishment comes as the demand for Starward continues to grow, both locally and globally. To support this growth, the multi-million-dollar investment will significantly expand production capacity, provide a stimulating new floor layout as well as offer new tour experiences with elevated viewing platforms for a birds-eye view of the distillery.

As of 8 February 2020, Starward has officially moved into the former ST. ALi Smalls Bar offering a luscious menu of food and drinks including six exclusive cocktail recipes curated in collaboration with the ST. ALi team. Experience the Espresso not Martini—combining Starward Two-Fold with ST. ALi cold brew coffee—or the decadent Coco-nuts featuring ST. ALi’s cold drip coffee, coconut cream, syrup and Two-Fold whisky…YUM!

Starward Founder, David Vitale says: ‘Like we pride ourselves on pushing the boundaries of what whisky can be, ST. ALi has been foundational in defining specialty coffee in Melbourne and continues to challenge the status quo. We’re thrilled to be able to partner with such a like-minded brand such as ST. ALi during this time and are looking forward to welcoming customers to our temporary home.’

Innovative leader of ST. ALi Salvatore Malatesta says: ‘Starward Whisky is delicious and audacious, two-character traits we hold dear to our hearts. We share an uncompromising commitment to quality and have tried and tested numerous coffee and whisky combinations to produce bold, daring and delicious drinks that equally capture who we both are.’

Starward will also continue to offer mini whisky masterclasses with Wednesday nights dedicated to a special cocktail masterclass! Serving up the finest whisky knowledge in their new laid-back location, guests are greeted with a smooth Two-Fold & Tonic—Starward’s fresh twist on a G&T—as they partake in a cocktail class available every Wednesday from 6:30pm-9:00pm.

Starward staff will be operating the pop up at Smalls Bar and serving drinks from brunch through to evening service.
