Honey beef stir-fry & noodles

INGREDIENTS

2 knobs of ginger, grated

2 cloves of garlic, crushed

2 bunch of Asian greens (e.g. bok choy), roughly chopped

2 long red chili, sliced

1 bunch of coriander, chopped

1 packet of ramen noodles

4 tablespoons of kecap manis

2 limes, cut into wedges

2 zucchinis, sliced into 1cm batons

2 carrots, grated

800gm of minced beef

200gm roasted cashews

A good drizzle of olive oil

3 tablespoons of water

2 tablespoons of soy sauce

2 tablespoons of honey



METHOD


1. Bring a medium saucepan of water to the boil and add the ramen noodles. Cook for 4 minutes, then drain and quickly rinse under cold water.


2. Drizzle some olive oil in a large wok over medium-high heat. Once hot, add the beef mince, ginger, garlic and the zest of one lime wedge and stir-fry for 3 minutes, breaking up the beef with a wooden spoon until just browned.


3. Add the honey and 1 tablespoon of soy sauce. Cook for 3 minutes and transfer to a medium bowl. In a small separate bowl, combine 1 tablespoon of soy sauce kecap manis and the water.


4. Return the empty wok to a high heat with a drizzle of olive oil. When the oil is hot, add the zucchini and carrot and stir-fry for 3 minutes. Add the Asian greens and stir-fry for 1 minute.


5. Add the small bowl of sauce mixture and cook, tossing, for 1 minute. Return the beef and add the ramen noodles and a good squeeze of lime juice. Toss together until heated through.


6. Garnish with chili, coriander and roasted cashews, as well as the remaining lime wedges.
