Spaghetti and ricotta

This is a simple, quick and nutritious meal for the time poor! You only need 6 ingredients and 15 minutes to whip up a creamy bowl.


Serves 2


Ingredients

  • 200g spaghetti

  • 200g fresh ricotta

  • 2 tablespoons of olive oil

  • A good pinch of salt

  • A generous shake of black pepper

  • Fresh basil leaves to garnish


Method

  1. Add the spaghetti to a large pot of salted boiling water. Cook for 8-10 minutes or until slightly al dente.

  2. Meanwhile, in a medium bowl mix the ricotta, olive oil, salt and pepper together.

  3. Drain the pasta but reserve 1 cup of the pasta water. Turn the stove off and stir in the ricotta mixture, coating the spaghetti evenly with the creamy sauce. If the texture seems too dry or the ricotta isn't mixing well with the spaghetti, add some warm pasta water to loosen.

  4. Season with more salt and pepper to your liking and divide between bowls. Add some fresh basil leaves to garnish.
